As their name implies, varietal wines are produced from one single and unique variety of grape. This is in contrast to the appellation wines which are usually a blend of several grape varieties.
Varietal wines are frank, complete and characteristic of their main grape.
White wines are usually made up of the Chardonnay, Grenache, Marsanne, Sauvignon, Cabernet and Viognier.
The Chardonnay is traditionally used in the Bourgogne region to make white wines. In the Languedoc-Roussillon region, this grape gives wine a great finesse, a golden colour with body, an aroma of exotic fruits, and an enduring and mellow taste.
The Sauvignon has a sunny colour with green highlights and an aroma hinting of citrus fruits. After an initial vigorous and lively burst of taste, it leaves a long-lasting flavour.
The Grenache, with its yellow and hues of green, has a nutty scent and supple, round and mellow taste.
The Syrah and Cinsault are used for rosé wines.
The Syrah is intense and bright with a powerful scent of violets. It tastes lively and balanced.
The Cinsault produces a very fruity and light-coloured wine.
The grape varieties used most frequently for red wines are the Merlot and Cabernet-Sauvignon.
The Merlot with its red garnet is a subtle and spicy wine with an aroma of red fruits and cassis, and a long, supple and vegetal taste.
The Cabernet-Sauvignon produces tannic wines of a deep red purple. It has a delicate and spicy scent with a taste of red fruit.
